Banana, Strawberry & Apple Muffins – Sugar-free, fluffy, and naturally sweet

These sugar-free banana, strawberry and apple muffins are fluffy, naturally sweetened by ripe bananas and fresh fruits. Perfect for morning energy boosts or kids' snacks.

Keep dessert light and cozy with these naturally sweet muffins that skip added sugar entirely. They are my favorite for mornings when you need a gentle energy boost or a family-friendly snack.

🛒 Ingredients

  • 2 large bananas: very ripe, with brown spots (they are the source of natural sweetness!)
  • 2 eggs
  • 100 g Greek yogurt
  • 60 ml coconut oil (melted) or butter
  • 1 teaspoon vanilla extract
  • 250 g flour
  • 1 packet baking powder + 1/2 teaspoon baking soda
  • A pinch of salt & cinnamon
  • 1 small apple: diced
  • A handful of fresh strawberries

👩‍🍳 Preparation

  1. Sweet base: Mash the bananas with a fork until smooth, then add the eggs, yogurt, oil and vanilla. Mix briefly.
  2. Fluffy mix: Stir in the dry ingredients (flour, baking powder, baking soda, salt and cinnamon). Mix gently with a spatula – the secret to fluffiness is not overmixing!
  3. Fruits: Fold in the apple cubes and half of the strawberries into the batter.
  4. Baking: Spoon the mixture into muffin cups, decorate with the remaining strawberries and bake in a preheated oven at 180°C for 20-25 minutes.

The result? A moist, aromatic and super airy interior, with zero grainy sugar! ☁️✨
